If you're looking for a versatile, flavorful bread to try with your cricket powder, this recipe is for you. My version is based on a sweeter profile, and includes warm baking spices like cinnamon and cloves. But I've had plenty sweet potato breads--especially in the south--that were less like a dessert and more like a side.
Sweet potatoes are packed with nutrients, but don't have a ton of protein. The cricket powder kicks that up a notch, and adds healthy Omega 3s and pre-biotic fiber.

This is another great vehicle for healthy cricket powder, which complements the flavors of sweet potatoes and baking spices. We typically serve it with warm brown sugar butter, or sometimes cinnamon whipped cream as a treat.

1 cup all purpose flour

2/3 cup white granulated sugar

⅓ cup Pure Cricket Powder

⅓ cup brown sugar

1 teaspoon baking soda

1 teaspoon kosher salt

½ teaspoon baking powder

½ teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground cloves

8 tablespoons melted butter

2 large eggs
-
2 teaspoons vanilla extract

½ cup milk

1 large baked sweet potato
-
1 cup chopped pecans
Directions
Preheat oven to 350 degrees. Grease, then flour one regular loaf pan.
Whisk dry ingredients together thoroughly
Whisk together (in separate bowl) melted butter, eggs, vanilla, and milk
Stir wet ingredients into dry ingredients
Whisk baked sweet potato until it reaches a smooth texture, free of lumps
Add whisked sweet potato and pecans to the batter and mix just to combine. Do not overmix batter.
Transfer to the loaf pan and bake for 40 - 45 minutes until an instant thermometer reads 200 - 205 degrees at the center.
Remove from the oven when ready, and let it sit for 30 minutes before freeing your new bread from the pan.
Recipe Note
Preparing the Sweet Potato
You can bake, steam, microwave, or even sous vide the raw sweet potato first. Or feel free to use a leftover sweet potato if you have one. Just make sure it's cooked perhaps a little bit more than you might normally, so it's easier to break down into puree.
Add-ins/Upgrades
- Include 1/2 cup of dark chocolate chips to the batter
- Drizzle icing on top once it cools. Vanilla icing, bourbon vanilla icing, or heck--even cream cheese frosting.
- Raisins? Did somebody say raisins?
- Top it with a brown sugar, butter, and pecan crumble about 10 minutes before it's done
- Use hickory nuts for true southern flavor
- If you have leftovers, keep them in the fridge and they'll last longer. Warm a slice or two up in the microwave, or melt butter in a sauté pan and grill it up.
