Cricket Muffin Gluten-Free Baking Mix
You will need: 2 Eggs (room temperature) 1 Cup Milk (room temperature) (For Dairy Free use Soy or Oat Milk) 1/2 Cup Oil 2 tsp Vanilla 1 TBSP Lemon or Lime juice (optional) 1/4 - 1/2 Cup Mix-ins: fruit or chips (optional) Try: berries, chopped banana, chocolate chips, nuts DIRECTIONS: PREHEAT: Set oven to 375°F. MIX: Whisk eggs, milk, oil, and vanilla in a large bowl. Add 3 Cricketeers muffin mix and stir until well combined and smooth. Fold in mix-ins if using. BAKE: Pour batter evenly among lightly greased or paper-lined cups. Let muffins rest for 10 minutes. Top with a pinch of sugar if desired. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. COOL: Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
